The word Izakaya comes from the long-standing Japanese tradition of lively, rustic eateries with a vibrant and friendly atmosphere. KU DÉ TA’s take on the concept begins with the same values of comfort, relaxation, and time-honoured methods of Robatayaki charcoal grill-fire cooking, and elevates it with an open kitchen, the freshest imported fish, and premium Japanese beer on tap, along with a comprehensive sake menu.

“Our concept was always to preserve not just the flavours and distinct ingredients of traditional Japanese comfort food, but to find a way to capture the comfort of eating in an old Japanese social setting. Some of that is achieved with atmosphere, like our artisanal plate ware from Aichi prefecture. But the essence comes from the way we select and assemble ingredients; a certain authentic Japanese way of cooking that comes through in presentation and taste, evoking nostalgia for old-style dining.”
